Beer didn't always taste like this. For most of its history, it didn't have hops in it at all — brewers used gruit, a mix of foraged herbs whose sale was often a taxed monopoly controlled by a local ruler or the Church. Hops won out partly because they worked better, and partly because they were free: a wild, untaxed plant that let independent brewers and trading cities undercut an entrenched tax system until it collapsed.
This episode traces that shift, from the earliest clear written record connecting hops to brewing (a French monastery's statutes from the year 822) through Bavaria's 1516 Reinheitsgebot, which made hops legally mandatory. Along the way, it corrects two of the most widely repeated legends in brewing history — that Henry VIII banned hops as a "wicked weed," and that India Pale Ale was invented specifically to survive the voyage to India. Neither holds up against the archival record, and even craft beer's own founding myth (Fritz Maytag's 1975 Liberty Ale) turns out to be a little cleaner in the retelling than the historical record actually supports.
The science side covers hops' real preservative mechanism, a folk sleep remedy with genuine pharmacological backing, and 8-prenylnaringenin — the most potent plant estrogen ever identified in a lab, discovered because generations of hop-pickers absorbed enough through their skin to disrupt their own menstrual cycles.

Recipe
Hop Syrup: Combine 1 cup simple syrup with 1 oz whole-cone aroma hops (Cascade or Saaz work well) in a small saucepan. Warm gently for 10 minutes — do not boil, which will pull out harsher, more vegetal notes. Strain and cool.
Combine gin, lemon juice, hop syrup, and bitters in a shaker with ice. Shake until well chilled, then double-strain into a chilled coupe, or over a single large ice cube in a rocks glass. Garnish with a light hop cone or a dried citrus wheel.
Named directly after the old folk remedy — dried hops in a sachet, tucked under a pillow to help with sleep. The science in this episode backs that up: a compound in hops acts on the same brain receptor many actual sleep medications target. This drink puts that same calming chemistry in a glass instead.

Cold-Brewed Hop Tea: Steep 1 tablespoon whole dried aroma hops in 2 cups cold water, covered, in the refrigerator overnight. Strain well before using — cold brewing pulls a much gentler, less bitter character than a hot steep.
Combine hop tea, honey syrup, and lemon juice with ice, stir well, and strain into a highball glass over fresh ice. Top with soda water. Garnish with a lemon wheel.

The written record for hops in brewing is solid from 822 onward, but there are earlier hints that didn't make it into the episode itself, because the evidence is thin enough that it deserves its own honest caveat rather than a confident mention. A possible hopped-beer vessel from Pombia, in northern Italy, may date back as far as 550 BCE. Macrobotanical hop remains have also turned up at two German sites — Aalen-Hofherrenweiler, around 250 CE, and Langenau, around 330 CE. A specialist in ancient brewing archaeology who's studied these finds is direct about what they actually prove: they're suggestive that hops and beer-making activity coexisted in the same places, centuries earlier than the written record confirms, but they're not proof that anyone was actually using hops in beer specifically. It's a real possibility hops go back much further than 822 — just not one anyone can currently prove.

Beer didn't always taste like this. In fact, for most of its history, it didn't have hops in it at all.
Before hops became standard, brewers flavored and preserved beer with gruit — a mix of foraged herbs that changed depending on where you lived. They used bog myrtle, yarrow, wild rosemary — whatever grew nearby, really. And gruit wasn't just a recipe. In most of medieval Europe, the right to sell it was a monopoly, usually controlled by a local ruler or the Church, and taxed accordingly. If you wanted to brew beer, you paid for gruit, whether you wanted to or not.
Hops solved that problem by accident. They grew wild and nobody owned the right to them. Once brewers figured out that hops did everything gruit did — flavor, preservation — even better than gruit, cities that adopted hopped beer could undercut anyone still paying the old tax. The Hanseatic League ran with this. They exported hopped beer directly into gruit-monopoly territory, undercut local prices, and made the old system impossible to defend. By 1516, Bavaria's Reinheitsgebot made it official: hops, water, and barley, nothing else, by law.
The earliest clear written record connecting hops to brewing comes from 822, from a monastery in northern France, in the statutes of an abbot named Adalhard. There are hints of something even older — a few archaeological finds in Germany and Italy that might push hopped beer back centuries further — but the physical evidence is thin, and the historians who study it are careful to call it suggestive rather than conclusive. The first person to actually describe, in writing, why hops kept beer from spoiling was a 12th-century abbess named Hildegard von Bingen. She wasn't even a fan. She wrote that hops made the soul sad.
Here's where the story gets interesting, though, because hops seem to attract legends the way a wet glass attracts dust, and it's worth mentioning two of them specifically.
The first: you'll hear, confidently, that Henry the Eighth banned hops outright, calling them a "wicked and pernicious weed." It's a good story. It's also not true. That exact phrase doesn't show up anywhere near Henry's own lifetime — the earliest anyone can find it in print is nearly three hundred years later, in 1794. What actually happened is smaller and stranger: Henry's own royal ale brewer was told not to use hops, a household preference, nothing more, while at the very same time, Henry employed a separate royal beer brewer, a man named John Pope, who used hops freely. A few English towns did pass local restrictions around then. It was plain trade protectionism — English guilds defending their turf from Dutch and Flemish competition.
The second legend: India Pale Ale, supposedly invented specifically to survive the voyage to India. Also not quite right. The beer a London brewer named George Hodgson sold to East India Company ships already existed — it was called October beer, already brewed strong and well-hopped for long storage at home. Hodgson didn't invent anything. He just had a brewery conveniently close to the docks and offered captains unusually generous credit. Other beers, far less hopped, survived the same trip just fine. Hops really do preserve beer and that part holds up as real, measurable chemistry. It just isn't why this particular style exists.
So what is hops actually doing, chemically, that made it worth building an empire's beer law around?
Start with the plant itself. Humulus lupulus isn't technically a vine. It's a bine, meaning it climbs by wrapping stiff hairs around a support, rather than using tendrils the way a true vine does. It also belongs to the same plant family as cannabis. This is an actual shared family, Cannabaceae, with genuinely overlapping chemistry. Only the female flowers get used in brewing, and only after they're dried and their sticky yellow resin, called lupulin, is extracted during the boil.
That resin carries two different jobs. Alpha acids provide bitterness, but only after they go through a chemical change during a long boil — raw, unboiled alpha acids barely taste like anything. Essential oils carry the aroma, and they're fragile enough that boiling destroys most of them, which is why brewers chasing aroma add hops late, or skip the boil for that batch entirely and just soak them in the finished beer instead.
The preservative effect that made hops worth a tax war is real, targeted chemistry. Alpha and beta acids specifically disrupt certain spoilage bacteria's ability to regulate their own internal chemistry, which kills them or stops them from multiplying. It's so precise that some spoilage bacteria have since evolved genetic resistance to it — an active biological arms race.
And there's a genuinely surprising side effect. Hops have a long folk reputation as a mild sedative — sachets of dried hops tucked under a pillow, supposedly to help you sleep. From the outside, it seems like a convenient story, but there is valid scientific evidence for it. See, there’s a compound in hops called humulone that acts on the same brain receptor that many actual sleep medications target. Age the hops a little, and a byproduct builds up that's mildly sedating on its own, just from being breathed in. The old hop pillow wasn't nothing. It was working on real chemistry, even if nobody involved knew why.
Here’s something even stranger to consider. The young shoots hops send up every spring — before the plant climbs, before any of the cones form — are, gram for gram, some of the most expensive vegetables in the world. Hand-harvested from frozen ground for a few weeks a year, they can fetch a thousand dollars a kilogram in parts of Belgium and France. Most people who drink beer every week have never once eaten the plant it comes from.
And the chemistry just gets stranger. Hops contain a compound called 8-prenylnaringenin — the most potent plant estrogen ever identified in a lab. It's strong enough that women who spent months by hand harvesting hops, generation after generation, absorbed enough through their skin to disrupt their own menstrual cycles. It's documented, peer-reviewed science, studied specifically because the effect was strong and consistent enough to be worth investigating, and the same compound is now used clinically to treat menopause symptoms.
Modern craft brewing turned this whole plant into something closer to a celebrity than an ingredient. For most of the history you just heard, hops were infrastructure. They did their job quietly in the background, occasionally banned by rumor, never given credit for what they were actually doing. That changed in 1975, when a San Francisco brewer named Fritz Maytag built a beer called Liberty Ale around a new hop variety called Cascade, using a technique called dry-hopping to push the aroma further than anyone had bothered to before. That beer is usually credited as the moment hops stopped being a background ingredient and became the whole reason people order what they order.
Even that story's a little cleaner in the retelling than the record actually supports — a beer historian who dug up tasting notes from the early eighties found people describing the original Liberty Ale as "porter-ish," a very different beer than the crisp, citrusy pale ale it's remembered as today. Which tracks. Between the king who never issued that ban, the empire's export beer that wasn't actually new, and now craft brewing's own slightly-improved origin story, that's three separate hops legends this episode has had to correct. Good stories get cleaner every time somebody tells them again. That might just be the most human thing about hops.
Hops were never really about flavor, not at first. They started as a way around a tax, became a preservative, and somewhere along the way turned into a folk remedy tucked under someone's pillow. Eventually they became the entire reason a certain kind of beer exists at all — the whole reason some people will drive across town for the right can. The plant never changed through any of it. What people needed from it did.
