About This Episode

In 1494, Columbus found a berry in Jamaica that looked enough like black pepper to fool him. He named it pimienta and moved on — and unlike most of the tidy stories that get told about spice history, this one is actually true. The mistake is still baked into the Spanish word for allspice five hundred years later.

The Pimento Walk

  • 2 oz aged Jamaican rum
  • 0.5 oz allspice dram (St. Elizabeth, Bitter Truth, or similar)
  • 0.75 oz fresh lime juice
  • 0.5 oz demerara syrup (1:1 demerara sugar and hot water, stirred until dissolved, cooled)
  • 1 dash Angostura bitters

Combine all ingredients in a shaker with ice. Shake hard until well chilled. Strain into a rocks glass over crushed ice, or into a chilled coupe for a cleaner presentation. Garnish with a few whole allspice berries and a lime wheel, or freshly grated nutmeg for extra warmth on the nose.

Named for the 1882 export ban that gives this episode its strangest turn — a plant nearly undone by a fashion trend for its own wood. A warm, non-alcoholic drink that leans into allspice's role as a genuine warming spice, distinct from a cold-brewed build.

Allspice Syrup: Combine 1 cup water, 1 cup sugar, and 2 tablespoons whole allspice berries, lightly crushed, in a small saucepan. Bring to a gentle simmer, then remove from heat and let steep for 20 minutes. Strain and cool.

Two things worth a footnote that didn't make the final script. First: a few sources credit the actual coining of the English word "allspice" not to traders generally, but specifically to Diego Álvarez Chanca, the physician who sailed with Columbus on the very voyage that first encountered the berry. It's a genuinely plausible detail — he was there, and ship's physicians of the era often kept detailed botanical notes — but it isn't corroborated widely enough to state as settled fact, so it stayed a footnote rather than a claim.

Second: allspice trees are dioecious, meaning individual trees are either male or female, and popular sources will sometimes give you very specific numbers for exactly how many more stamens a male flower carries, or exactly how long a tree lives. Digging into it, those specific figures didn't hold up to scrutiny — one source's tree lifespan didn't match another's by a wide margin. The underlying fact is solid (you genuinely can't tell male from female until the trees mature and bloom, which is the whole reason plantations never really worked), but the precise numbers people cite for it are shakier than they sound. Worth remembering next time a spice fact online sounds a little too exact.

It was 1494. Columbus was somewhere in Jamaica, on his second voyage, when he stumbled onto a cluster of small, dried berries. They looked almost exactly like what he had been hunting for across the Atlantic: black pepper. Back in Europe, pepper wasn’t just a kitchen staple—it was serious business. It was valuable enough that merchants crossed oceans for it, nations plotted fierce expeditions, and monarchs poured serious money into adventurous schemes, all for a pinch of the stuff. Columbus was so invested in this quest that he brought real black peppercorns to the New World as visual aids—a little show-and-tell for the locals, just in case they could point him toward the jackpot.

So, when he saw those peppery-looking berries in Jamaica—wrinkled, dark, slightly pungent—he was ready to call it a day. Those were good enough. He gave them a name: pimienta, the Spanish word for pepper, and pressed on. Nobody around him bothered to dispute it, and, more importantly, the name just stuck. Allspice, as we now know it, isn’t even botanically related to true pepper. But the comparison was persuasive enough to carry forward for centuries.

Here’s the really fascinating part: this isn’t one of those tall tales propped up by repetition and nostalgia. It’s actually true. Sometimes history is just that weirdly straightforward. Columbus misidentified a New World plant, wrote it down, and left future cooks repeating his honest mistake for the next five hundred years. Walk into any Spanish-speaking kitchen today and you’ll still hear the phrase pimienta de Jamaica—Jamaica pepper. The idea drifted quietly from logbook to recipe, never questioned, never corrected.

The English, as usual, came late to the story, albeit with a touch more practicality. By the early 1600s, traders and botanists realized something embarrassing: “pepper” turned out to be a pretty misleading name when their new Jamaican berry didn’t taste remotely like black pepper. Instead, it tasted like a little bit of everything—cinnamon, clove, nutmeg. All the expensive spices, bundled up into a single little bead. So rather than staking their business on another mistaken identity, the English called it allspice. The name finally made sense—a single, affordable import that covered the flavor profile of half the Asian spice route. Cooks didn’t need much persuading to switch over, when allspice did the work of three precious imports for a fraction of the price.

There’s one curious footnote that does crop up in a few sources: some say Diego Álvarez Chanca, Columbus’s ship’s doctor, actually coined the term “allspice” on that same voyage. Plausible? Sure. Proven? Not really. The evidence is thin, so it is a possibility—an interesting bit of apocrypha, but nothing solid.

Of course, long before Columbus made his lucky guess, the Maya and the Aztec had already figured out the value of these berries. They called it xocoxóchitl—Nahuatl for “sour flower”—a name Francisco Hernández, royal physician to the King of Spain, wrote down in the 1570s when cataloging the plants of the New World. For these cultures, allspice wasn’t a cheap pepper knockoff; it was a prized flavoring in xocolatl, the legendary, unsweetened cacao drink. Forget sugar—nobody in the Americas had that luxury yet. Allspice, along with chili and vanilla, had to do the hard work of making cacao palatable, especially for kings and warriors. The Maya found another use, too: they worked crushed allspice berries into embalming rituals, rubbing the aromatic paste onto lost rulers before burial. The chemical compounds that kept food from spoiling helped mask the scent of decay—a practical and ceremonial function, woven into the very fabric of life and death.

When Europeans finally began to understand allspice, the scramble for monopoly never really materialized. Sure, allspice was useful, but it wasn’t sugar or silver. Spain, busy strip-mining the Americas, didn’t push too hard. And for any rival power thinking of snatching Jamaica and its berries—like the Dutch did with nutmeg islands—nature had a trick up its sleeve. Allspice trees need both male and female plants growing together, and nobody outside the Caribbean understood that. Every European transplantation failed, leaving Jamaica as the center of the allspice universe for centuries.

When Britain captured Jamaica in 1655, it didn’t rip up the forests to plant vast allspice groves. Instead, they cleared out the undergrowth and let the wild trees stand, creating open pathways known as pimento walks. From those loose groves, allspice radiated outward—sometimes quietly, sometimes exuberantly—into European and Middle Eastern kitchens. You’ll find its warm, complicated flavor in British Christmas puddings, Polish sausages, Scandinavian herring, even as the backbone of Levantine “seven spice” blends. Yet it never quite reached the fever-pitch luxury of pepper or nutmeg. Allspice became something else: the humble, adaptable, reliable stand-in, a way to conjure up distant flavors from a single, stubborn berry that insisted, against all odds, on keeping its roots tangled deep beneath the Jamaican soil.


Allspice comes from Pimenta dioica, a tree in the Myrtaceae family — the same one as cloves. That “dioica” in its name isn’t just a botanical detail; it’s the reason allspice proved nearly impossible to smuggle or establish outside its native range. Male and female flowers grow on completely separate trees, and you can’t tell which seedling is which until the trees are old enough to flower—sometimes that means waiting years. If you’re a farmer planting a grove, you gamble: plant, wait, and hope you get enough females mixed in to actually set fruit. With allspice, there’s no practical way to sort the seedlings ahead of time, unlike crops where you can spot the sex early on. That quirk of biology, more than any trading law or secret, explains why large-scale allspice cultivation simply never caught on outside the Americas.

And the harvest process? It’s destructive in a way that would devastate most fruit trees, yet allspice somehow thrives on rough handling. The berries grow at the very tips of tall branches, too difficult to pluck by hand. So workers climb up, cut or snap off entire limbs, and toss them down to be stripped bare on the ground. Surprisingly, these trees tolerate the abuse. What would kill a tender orchard essentially acts as an annual pruning session, spurring new growth when spring returns. Perfect timing matters more than any fancy technique, though: you have to pick the berries while they’re still hard and green. Wait even a little too long—if one berry fully ripens and turns a soft purple—and you lose everything distinctive. Those key eugenol compounds, the ones responsible for that dense, spicy flavor that’s reminiscent of cinnamon, clove, and nutmeg, change into sugars. The result? Just another sweet, generic fruit.

Once picked, the green berries get spread onto sun-warmed patios. They dry in the open air for several days, workers turning them frequently so they cure evenly. Slowly, they shrink and darken from green to a deep, resin-like brown, the seeds inside loosening and beginning to rattle.

The main flavor compound, eugenol, is the same molecule that gives cloves their heady smell and mild numbing feeling. It’s genuinely well studied, instead of just an old wives tale passed off as science. Laboratory experiments also show allspice fights off foodborne bacteria like E. coli, Salmonella, and Listeria, breaking down the very membranes bacteria need to survive. It even hinders H. pylori, the bacterium mostly responsible for stomach ulcers, which is a tough target for natural antimicrobials.

More surprising research has emerged recently, that’s solid and peer-reviewed. Studies find that allspice extract spurs programmed cell death in lab models of breast and prostate cancer, thanks to compounds like ericifolin and gallic acid. These molecules target cancer cells specifically, leaving healthy ones mostly alone in the same test dish. Real data, real scientists. But here’s the truth: all this work stays in the lab. It’s in vitro and animal models only. Human trials are missing, largely because you can’t patent raw plant berries. No patent means no corporate funding for the expensive process of clinical testing in people, no matter how promising the lab results look.


Allspice almost vanished from the world, and food had nothing to do with it. In the Victorian era, fashion turned the young wood of the allspice tree into a sought-after material for walking sticks and umbrella handles. People in Britain and America latched on to the trend. Choose allspice, they said, because the wood is firm but bends just enough, resists rotting, and, best of all, releases a gentle, warm aroma when you grip it. Imagine pocketing a bit of Christmas every time you left the house— a tiny bit of luxury, hidden in the daily racket. For a while, every proper gentleman gave himself away with a hand that smelled faintly of gingerbread and pie.

But that comfort came at a deep cost. The forests of Jamaica—where allspice truly grew wild—took blow after blow, as workers cut down the saplings faster than new ones could sprout or even bear fruit. The catch was simple: kill a young tree for its fragrant handle, and you end up with none of the spice that actually put Jamaica on the culinary map. By the early 1880s, the world nearly lost allspice altogether just for the sake of a stylish wrist accessory. The Jamaican government, seeing disaster brewing in its forests, slapped a ban on the export of saplings. They had to halt this craze before a British fad wiped out an entire future crop.

But that’s just one twist in allspice’s wandering story. There's a drink, too—Pimento Dram, also called Allspice Dram. It started out, according to the Oxford Companion to Spirits & Cocktails, as nothing more than a home remedy. People drank it for cholera or diarrhea—folk medicine, not mixology. By 1850, though, it went commercial. When Jamaica displayed its best at London’s International Exhibition in 1862, Pimento Dram stood right there along with coffee and sugar, practical proof that the island had more to offer than just sunshine and beaches.

Allspice Dram didn’t have an easy time fitting into the early cocktail world. The word “pimento” tripped up Americans, who couldn’t picture anything but those little red things inside olives. So the exporters ditched the original name—and also silently erased a piece of Jamaica’s story—just to clarify a label. Once it had the right name, mixologists hid it behind the bar, literally. Don the Beachcomber, a tiki pioneer, poured the dram into secret bottles, keeping rivals guessing as to what made his concoctions so alluring and warm. Then, commercial production simply fizzled out in the 1980s, and for about twenty-five years you just couldn’t find it unless you managed to get to Jamaica. It became this almost mythical ingredient, hard to obtain, and nearly forgotten, until Eric Seed, an enterprising American, discovered an old recipe and revived it in 2008 as St. Elizabeth Allspice Dram. All of a sudden, the classics came back to life. Drinks that hadn’t been made in a generation could finally return, and bartenders from New York to Tokyo could pour a little bit of Jamaica into their shakers again.

Jamaica still treats allspice with a respect few others grasp. While most people think of it as just another jar on the spice rack, Jamaicans call it pimento—as essential to the national story as rum or reggae. They still control about seventy percent of the world market. Jamaican allspice berries, in particular, have an oil content unmatched anywhere else—up to four percent, which really matters to chefs and distillers who chase flavor with serious intent. Exporting isn’t easy; you need a special license from the government. Jamaica doesn’t just let its pimento slip away.

Even what’s left behind in the spice trade—the leaves, the green wood—finds a second life at home. While much of the world discards them once the berries are harvested, Jamaicans toss the leaves and wood onto their fires. That wood smoke defines jerk, the smoky crust and perfume you can’t imitate with ground spice alone. In Jamaica, the whole plant still earns a place in the kitchen and beyond, shaping flavor and tradition in ways outsiders often miss.

So, no, allspice never needed a war or an empire’s decree or a miracle to make it matter. It quietly survived Columbus’s mistakes, nearly vanished thanks to English fashion, and disappeared from most bars for a quarter-century. Yet it sits, mostly unnoticed, in kitchen cupboards across the world—survivor of strangeness, ready to surprise anyone curious enough to ask where it really came from.
